Chickpea Tomato Skillet
2 Tomatoes diced
15 1/2 oz. can of Chickpeas
2 small cloves of garlic diced
1 tbsp of diced ginger
1/4 tsp cumin
1/4 tsp turmeric
1/4 tsp curry
1/2 lemon squeezed
1Place all in skillet. Simmer in medium heat for 8 minutes. Serve over rice cauliflower rice.
